Coffee and Pink Grapefruit Icy Poles

An adult icy pole that's perfect for a hot summer's day. To make this an extra special treat, serve in a glass with a shot of gin topped with soda.

Makes: 6
Cooking Time: 10 mins + 5 hrs

Ingredients:
700ml pink grapefruit juice*
2 tsp kȯ-fē tonic syrup
Maple syrup, to taste
1/2 grapefruit, sliced

Method:

  1. In a jug, mix the pink grapefruit juice and kȯ-fē tonic syrup. Add maple syrup to taste and place in icy pole moulds along with a slice of pink grapefruit.

  2. Freeze until frozen, about 5 hours.

*You can also use cordial or a blood orange soda.
